half moon bay pumpkin bread

1 cup unsweetened pumpkin (not pie mix!)
1 cup sugar
½ cup vegetable oil
2 eggs
1¼ cups all-purpose flour
½ cup whole wheat flour
1 tsp baking soda
1/4 tsp baking powder
½ tsp ground cinnamon
½ tsp ground cloves
½ tsp ground nutmeg
½ tsp salt
1 cup roasted pumpkin seeds (optional)

Preheat oven to 350°F. Spray bottom of 8 x 4-inch loaf pan with non-stick cooking spray. Line bottom of pan with parchment paper. Spray entire pan.

Beat the pumpkin, sugar, oil, and eggs in a large bowl. Sift the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, and salt into another bowl. Add the dry mixture to the wet ingredients and stir to combine.

Pour into prepared loaf pan and sprinkle with pumpkin seeds. Bake for full 60 minutes or until the top is risen and well browned.

Tip: Serve warm with honey butter.
